First time use steps:
Step1:wash with warm water and mild soap. Dry thoroughly.
Step2 :on high heat, rotate the pan until the surface turns blue.
Step3:let the pan cool naturally for 10-15 minutes.
Step4:on low heat, rub 1 tbsp of vegetable oil over the interior with a paper towel. Heat for 5 minutes
Step5:cook 2-3 oz of fatty meat (bacon or pork belly) over medium-low heat. Rub meat across the surface for 5-7 mins. Discard the meat.
Step6:quickly stir-fry greens (like spinach or kale) on high heat. Discard them-they help absorb excess oi
Step7:do not wash for 24 hours. Store in a dry place to allow the oil layer to polymerize
