MITSUMOTO SAKARI is committed to maintaining the age-old tradition of hand forging and continues to craft each knife by hand. Each professional chef's knife takes at least 90 days to forge by hand to completion.
Each exquisite piece of kitchen cutlery is carefully crafted by knife makers. While preserving traditional hand forging techniques, they combine modern quality materials with the latest technology to provide quality kitchenware for professional chefs and home cooks alike.
MITSUMOTO SAKARI Hand-Hammered Wrought Iron Wok
Built around a 12.6-inch round-bottom bowl with a 4.1-inch depth, this wok provides space for stir-frying vegetables, searing meat, tossing noodles, and preparing one-pan dishes over a gas burner. The curved base guides ingredients toward the center and supports fluid tossing movements, while the 8.5-inch handle adds reach and leverage for controlled food movement during high-heat cooking.
Crafted from wrought iron with 99.8% iron content, the cooking surface has no applied nonstick coating and is designed to develop a natural patina through proper seasoning and repeated use. Hand-hammered fish-scale texture creates subtle separation beneath ingredients, supporting more consistent food release as the surface becomes seasoned. The grooved sapele wood handle provides a defined grip while keeping the hand farther from the heated bowl during lifting, tossing, and serving.
Seasoned Surface for Smoother Release
After proper preheating and oil seasoning, the hand-hammered surface supports easier egg release and controlled turning with a spatula. Continued cooking helps the natural patina become smoother over time.
Preheat, Oil, and Build the Patina
Warm the round-bottom wok over a gas burner before adding a thin layer of cooking oil. This heat-and-oil routine helps condition the 99.8% high-purity iron surface for stir-frying, searing, and tossing.
Simple Care Between Uses
After cooking, rinse the wok with warm water and clean it with a soft scrubber. Heat the empty wok briefly to dry the surface, then apply a thin layer of oil before hanging or storing it for the next use.
IRON WOK CARE GUIDE
- NEW WOK: FIRST USE
Before first use, wipe the wok with a soft cloth and dry it thoroughly. Warm the wok over low heat to approximately 160–175°F, then turn off the heat. Apply a small amount of cooking oil with a paper towel, spreading a thin, even layer across the cooking surface
- DAILY CARE AND SEASONING
After cooking, rinse with warm water and clean with a soft scrubber. Heat the empty wok briefly to dry the surface, then apply a thin layer of cooking oil. Regular care helps maintain the developing cooking patina and prepares the wok for its next use
- SEASONING DEVELOPMENT
With frequent cooking and proper care, the seasoned surface may begin to develop in approximately 10 days. With occasional use, the process may take 15 to 30 days. As the natural patina builds, the cooking surface can support smoother food release and more consistent wok performance
- Generous Cooking Capacity: The 12.6-inch diameter and 4.1-inch depth provide room for stir-frying vegetables, searing meat, and tossing noodles, while the 8.5-inch handle adds reach and leverage over a gas burner
- Round Bottom for Gas Cooking: The curved base guides ingredients toward the center and supports quick tossing, helping users manage heat and food movement with greater control in both home and professional kitchens
- 99.8% High-Purity Wrought Iron: Made without an applied nonstick coating, the iron surface is designed to build a natural patina through proper seasoning and repeated cooking, supporting easier food release over time
- Hand-Hammered Fish-Scale Texture: Naturally varied hammer marks create subtle spacing beneath ingredients, while continued seasoning helps build a smoother cooking patina for more consistent food release over time
- Grooved Sapele Wood Handle: The 8.5-inch sapele handle keeps the hand farther from the heated bowl, while the wood construction and carved grip grooves support a more secure hold when lifting, tossing, or serving
